Rules for making a healthy salad
6/25/2007
1. All lettuce is not created equal
If you are looking for nutrients, dark, leafy greens, Romaine lettuce and Spinach are your best options. They have more antioxidants, phytonutrients, vitamins and minerals than Iceberg lettuce.
2. Fat-free dressing is your best bet
Fat free dressing will save you a lot of calories. But definitely be mindful of how much you're using. Less is more.
3. The more colorful the better
Load up on raw vegetables, including broccoli, bell peppers, carrots and tomatoes to maximize the vitamins, nutrients and antioxidants you get from your salad.
4. Always add protein
If you don't you will be hungry, which will cause you to eat more later. Hard boiled eggs, lean cuts of meat [like turkey or chicken] or beans -like chickpeas or black beans].
